About the Chefs

Chefs Lois Ellen Frank, Ph.D. and Walter Whitewater are Santa Fe, New Mexico based Native American chefs at Red Mesa Cuisine, a catering company specializing in the revitalization of ancestral Native American cuisine with a modern twist using ingredients and preparing foods focused on health and wellness. Together, they have worked with communities in Southwest for over 30 years. This work culminated in the James Beard Award winning cookbook, Foods of the Southwest Indian Nations.

Foods of the Southwest Indian Nations

Join Native American chefs Lois Ellen Frank, Ph.D. and Walter Whitewater of Red Mesa cuisine and enjoy a three-course meal that will feed the body and nurture the soul while learning about the cultural history of the native foods of New Mexico. Roast green chiles and then stuff them with a locally sourced bison sautéed with tomatoes, onions, garlic, and fresh tarragon. Then make herb roasted potatoes and a tomato sauce to accompany the stuffed chile. Students will prepare a beautifully presented dish using ancestral foods and Native American culinary techniques dating back millennia in a contemporary kitchen. An organic sweet corn soup served with corn bread and a flourless chocolate torte served with a hand harvested chokecherry and peach honey sauce and fresh berries prepared by Chefs Lois and Walter will accompany the meal. Class closes with a traditional Native American song by Chef Whitewater. Lunch Class 10:30am to 1:30pm or Dinner Class 4:00pm to 7:00pm.

Quintessential Cocktails and Cookies

Sip on a frozen or shaken prickly pear margarita made from hand harvested prickly pear syrup while making Bizcochitos, New Mexico’s traditional state cookie. Enjoy creating cookies shaped into coyotes that howl at the moon, or iconic Saguaro cactus shapes and stars. Then using a peach honey sauce and a hand harvested local chokecherry sauce made by Chefs Lois Ellen Frank, Ph.D. and Walter Whitewater, paint custom scenes on plates to enjoy with your specialty margarita. Learn about the history of the foods from this region while sharing stories and making delicious cookies that you’ll have plenty to share and enjoy after the class.

Minimum 6 People for a hands-on two-hour class 3pm to 5pm or 4pm to 6pm.

New Mexico Beer and Bison Burgers

Grill locally sourced bison burgers mixed with Chef Lois Ellen Frank, Ph.D. and Chef Walter Whitewater’s secret Southwest Spice Blend served on Native American No Fry Frybread (a grilled flatbread). Make a tri-colored cole slaw with a raspberry jam dressing with herb roasted fingerling potatoes to accompany your burger. All while sipping local two different New Mexico Beers and enjoying freshly made guacamole and salsa with blue corn chips. Grilled pineapple drizzled with a dark chocolate and served with fresh berries will accompany the burger meal for dessert. Participants will prepare a delicious meal using ancestral foods and Native American culinary techniques dating back millennia and learn about the history of the foods from the region. This class will be outside on the back patio of the Ranch overlooking scenic New Mexico. Lunch Class 10:30am to 1:30pm or Dinner Class 4:00pm to 7:00pm.
